Do you have stale bread now? Please don’t throw it! Here is a typical Tuscan summer dish, La Panzanella.

Soak the stale bread in the water then squeeze it. Put it in the bowl with red onion, tomatoes, cucumber and basil leaves.

Flavor with salt, pepper, vinegar and fresh extra virgin olive oil. Leave it in fridge before you eat!
